Every time we post about a new chain coming to town, someone chimes in with “Chipotle!” It’s easily one of the most wished-for chain restaurants in Boerne.
So when we tuned into last week’s Boerne Neighborhood Discussion (BND) meeting — held over Zoom to discuss the upcoming Starbucks project on Herff Road and Gallant Fox — we couldn’t help but notice something interesting on one of the site plans they were showing: a Chipotle logo on the building next door.
Naturally, we reached out to the City of Boerne to ask if that was officially in the works.
The City’s Response
Here’s the official statement we received from city staff:
“At this time, a Chipotle is not expected at the location next to Starbucks. While the project developer had previously been in discussions with Chipotle, it is not currently anticipated to be developed at that site. To date, no location has been confirmed for a Chipotle within the city.”
So for anyone who got their hopes up, you almost had your wish.
But Boerne remains Chipotle-free for the time being.
That said, it’s worth noting that the site plans for the Boerne Town Center development do have a placeholder for a “Mexican QSR.” (QSR stands for Quick Service Business). And Chipotle falls squarely in that category.
So could we see a Chipotle in that development mixed in with Panda Express, Freddy’s, and the rest? Maybe, but that’s pure speculation.
But If You’re Craving a Giant Burrito…
All that said, the fact is that if you’re looking for a Chipotle-style burrito bowl fix, there’s a local option we highly recommend: Lupe’s Mex-Tex, the food truck parked in the beer garden at Free Roam Brewing.
They serve up giant, flavorful burritos made with fresh, organic ingredients — and honestly, it’s a hidden gem.
You won’t get in and out as easily as Chipotle, but the food is so much better.
