Back in November 2024, we broke the news on Instagram that the family behind Cibolo Creek Brewing Co. and Hamby’s was opening a new barbecue concept in the Cibolo Creek Brewing beer garden—and to say we were excited is an understatement. Now, months later, Offline BBQ is nearing completion, and the wait for Boerne’s newest barbecue joint is almost over.
In early January, the team installed the massive 500-gallon pit, marking a major milestone for the project.
And now, after months of construction and planning, Co-owner Josh Mazour shared with us that that “aiming for the week after Spring Break” to open—though he emphasized that it’s a loose goal.
Once open, Offline BBQ will operate as a walk-up counter service spot, with an initial schedule of Saturday and Sunday service until sell-out. Over time, the goal is to expand hours to Thursday through Sunday.
The Location & What to Expect
Offline BBQ will be located in the back of Cibolo Creek Brewing Co., next to the beer garden and behind the stage where live music regularly takes place. This setup means great barbecue, cold beer, and live music—all in one spot.
While the full menu is still being finalized, the team has hinted that Offline BBQ will take a creative approach to traditional Central Texas barbecue. Cibolo Creek’s existing menu already features smoked meats in dishes like their pastrami Reuben sandwich and Chinese pork belly tacos, so we expect Offline BBQ to build on that creativity while still paying homage to classic Texas barbecue.
