Boerne’s coffee scene continues to change, and we have updates on three projects we’ve been following over the past year.
One proposed Starbucks now appears to be dead, another drive-thru coffee chain has plans for South Main Street, and a long-awaited coffee shop at Boerne Town Center finally has its sign up.

Starbucks No Longer Expected on Herff Road
It appears plans for a new Starbucks on Herff Road have officially fizzled out.
Last summer, the City of Boerne approved a Special Use Permit that would have allowed a Starbucks drive-thru to move forward near Herff Road and Gallant Fox.
But months went by without any visible activity on the property.
When we checked in with the City of Boerne in April, Communications Director Chris Shadrock told The Boerne Life that the city had not heard from the developers since approving the Special Use Permit. He also said no construction plans had been submitted.
Since then, we’ve heard from multiple sources that Starbucks has pulled out of the project. The public hearing sign that sat on the property for nearly a year has also been removed.
We went back to the city to ask if it was official that Starbucks was no longer coming. When asked whether the deal was dead, a city spokesperson responded, “Pretty much.”
So while that’s not exactly a ceremonial breakup announcement, all signs point to Starbucks no longer moving forward with the Herff Road location.
Meanwhile, construction continues nearby on Boerne ER.
7 Brew Coffee Planned for South Main Street
While one coffee drive-thru appears to be out, another could be on its way.
Plans for Boerne Town Center show 7 Brew Drive Thru Coffee on a pad along South Main Street next to All American Car Wash. And at the August Planning & Zoning meeting, a representative for a proposed development on the lot next door acknowledged that a 7 Brew would be their neighbor and share the access point from South Main.
For those unfamiliar with the brand, 7 Brew is a rapidly expanding drive-thru coffee chain built around speedy service and a huge selection of customizable drinks. Rather than ordering through a traditional speaker box, customers typically order from employees using tablets or at a drive-up window.
The company serves coffee, energy drinks, teas, smoothies, shakes and other drinks, with thousands of possible combinations.
For now, however, this one remains firmly in the “in the works” category.
We still haven’t seen a construction timeline announced, and the property remains untouched as of our latest look. We’ll continue watching for permits, construction activity and other signs that the project is moving forward.
Bad Ass Coffee of Hawaii Signage Goes Up at Boerne Town Center
And last but not least, we have more visible progress at Boerne Town Center.
The sign for Bad Ass Coffee of Hawaii went up on its storefront in recent days, giving us one of the clearest signs yet that the coffee shop is getting closer.
The Hawaiian-themed coffee franchise is taking the first retail space in Phase 1 of Boerne Town Center.
This one has been a long time coming. Bad Ass Coffee was originally expected to open in October 2025, but its opening was delayed along with the rest of the development.
Now, Phase 1 is getting much closer to completion, and the new signage is another sign of progress.
An opening date has not yet been announced, so we’ll keep an eye on it.
Boerne’s Coffee Scene Keeps Growing
To recap: the proposed Starbucks on Herff Road appears to be dead, 7 Brew is planned for South Main Street but hasn’t started construction, and Bad Ass Coffee of Hawaii now has its sign up at Boerne Town Center.
That’s a lot of coffee news for one town. Apparently Boerne will remain very, very caffeinated.
